I couldn't be happier to live close to an Asian grocery store -- a Hmong owned one at that. Which means that they have every single ingredient I need should the mood strike for me to make Lao/Thai food all day. I've been reunited with my bamboo steam cooker (for making delicious sticky rice) and my mortar + pestle, which I use to make chili sauce dips (roasted garlic, Thai peppers, tomatoes, coriander mixture) and of course, the beloved papaya salad.
When I eat alone, I make it so spicy that I think my head is going to rocket right off into space. The only person who can out-spice me is of course my mother. She served me a great version of papaya salad mixed with Thai eggplant once and my stomach immediately curdled. She's sending me a care package which I cannot wait to receive -- her homemade sausages bearing the heaviness of lemongrass and her special chili/tamarind dip which go and in hand with sticky rice.
I am so lucky to have grown up being fed delicious Lao/Thai dishes by uber talented Chef Mom!
